Wheat/flour test manual

Campden & Chorleywood Food Research Association has published a new edition of its Manual of methods for wheat and flour testing. It features new methods for determining starch damage, hardness index, hectoliter weight and the use of a check tile for grade color of National Standard flour. In addition, many existing methods have been updated and revised and various procedure protocols are listed. As in the previous 1997 edition, statistical data is included to support each method.
