Cereal chemist Walter Bushuk honored

WINNIPEG, MANITOBA, CANADA — World-renowned cereal chemist Walter Bushuk has been appointed as a Member of the Order of Canada by Canadian Governor General Adrienne Clarkson.
Bushuk, professor emeritus at the University of Manitoba, is credited with improving wheat quality by investigating its protein composition and its interaction with other flour components during processing. Bushuk was the second Canadian to serve as president of the American Association of Cereal Chemists. In 2001, he was honored at a AACC symposium entitled "Wheat Quality Elucidation: The Bushuk Legacy." The Order of Canada was established in 1967 to recognize outstanding achievement and service and is Canada’s highest honor for lifetime achievement.
